Gazpacho -- Refreshing and Cool for Summer!
Oh, yes, and healthy, too!

Ingredients:
- 1-1/2 pounds fresh ripe tomatoes
- 1 medium green bell pepper, cut in pieces
- 1 small onion, cut in pieces
- 2 small cucumbers, (un)peeled and cut in pieces
- 2-4 tablespoons vinegar
- 1/4 teaspoon tarragon (optional)
- 1 clove garlic, chopped
- 1 cup tomato juice (can substitute 1 cup ice water)
- Try to avoid salting this
Preparation:
- Blend all ingredients in a food processor/blender until there are no
large pieces and basically what you have is a drinkable puree. Adjust
seasoning to your taste, adding salt or vinegar to increase the zip! Chill
in fridge several hours before serving so flavors have time to "marry".
- You can mix or drizzle with good quality olive oil.
Serving Recommendations:
- Presentation may include toppings of croutons, diced cucumber, green
pepper, tomato or onion.
- In Texas, cilantro is a nice garnish, too. Now, enjoy!
